  • 8 slices Woolworths wholemeal soft sandwich bread
  • 20grams baby spinach leaves
  • 1/2 avocado, sliced
  • 1 Lebanese cucumber, sliced diagonally

Description

With a delicious herbed ricotta, spinach, avocado and cucumber filling, these nutritionally-approved super green finger sandwiches make a great picnic snack for kids.

Method

Step 1 of 2

Combine ricotta, lemon juice, chives and parsley in a small bowl. Season with freshly cracked black pepper. Stir until well combined.

Step 2 of 2

Spread each slice of bread with herbed ricotta. Then top 4 slices with spinach, avocado and cucumber. Sandwich with remaining bread slices, ricotta-side down. Trim crusts, if desired, then cut each sandwich into thirds to form 3 fingers. Place finger sandwiches in an airtight container and chill until ready to transport with ice-bricks or to serve.
