- 1 small brown onion, finely chopped
- 1 clove garlic, crushed
- 1 carrot, diced
- 1 stalk celery, diced
- 250grams chicken breast fillet
- 100grams Macro Organic wholemeal spaghetti, broken in half
- 1 cup salt-reduced chicken stock
- 1/2 cup frozen corn kernels
- 60grams baby spinach leaves

Description
A comforting bowl of chicken noodle soup that warms the soul with its savoury broth, tender chicken, and springy noodles. This winter delight is easy enough for kids yet flavourful enough for adults.
Method
Step 1 of 3
Spray a large saucepan with oil and place over medium heat. Add onion, garlic, carrot and celery and cook for 10 minutes or until tender.
Step 2 of 3
Add chicken, pasta, stock and 3 cups water to pan. Cover and bring to the boil. Reduce heat to low and simmer for 10 minutes or until pasta is tender and chicken is cooked through. Transfer chicken to a chopping board. Using 2 forks, shred chicken.
Step 3 of 3
Return chicken to pan and add corn and three-quarters of the spinach. Cook for a further 2 minutes or until hot. Ladle between bowls. Top with remaining spinach. Season with freshly cracked black pepper. Serve.
