  • 2tablespoons vegetable oil
  • 2 free range eggs, lightly beaten
  • 500grams chicken breast fillets, cut into small pieces
  • 2tablespoons Kikkoman soy sauce
  • 400grams Woolworths Cook stir fry mix rainbow vegetables
  • 1 long red chilli, thinly sliced

Looking for a quick, tasty midweek dinner? This budget-friendly chicken fried rice won't disappoint.

Method

Step 1 of 4

Cook rice according to package instructions.

Step 2 of 4

Meanwhile, heat a large non-stick frying pan over medium-high heat. Add 1 tsp oil. Add eggs, tilting to cover base. Cook for 2-3 minutes or until golden-brown underneath and just set. Transfer to a chopping board. Roll up omelette to form a log. Slice into thin ribbons. Set aside.

Return pan to heat. Add 2 tsp oil. Cook chicken for 2 minutes or until starting to brown. Add 2 tsp soy and cook for a further minute or until chicken is cooked through. Transfer to a plate. Heat 2 tsp oil in pan. Add vegetable mix and 2 tsp soy, and cook for 3 minutes or until vegetables are tender. Transfer to the plate with the chicken.

Step 4 of 4

Heat remaining oil in pan over high heat. Add rice and spread it over base of pan. Allow to cook for 2 minutes or until rice starts to crisp. Drizzle with remaining soy and stir to break up and coat the rice. Return chicken and vegetables to pan. Stir for a further minute or until heated and combined. Remove from heat. Spoon mixture into bowls. Top with omelette slices. Sprinkle with chilli. Serve.
