  • 2 Mission Extra Soft Original Tortillas
  • 5milliliter extra virgin olive oil cooking spray
  • 1/4teaspoons smoked paprika
  • 840grams condensed tomato soup
  • 420grams corn kernels, drained
  • 1 cup shredded rotisserie chicken
  • 420grams no-added-salt Woolworths Mexican-style three-bean mix, drained, rinsed
  • 1/3 cup shredded tasty cheese
  • 1/2 sour cream
  • 1/4 bunch coriander, leaves picked
  • 1 lime , cut into wedges

Description

Skip dinnertime stress and make this easy, comforting shredded chicken and toasted tortilla soup. It's the perfect way to warm up when the cold weather hits!

Method

Step 1 of 3

Preheat oven to 200°C/180°C fan-forced. Line a large baking tray with baking paper. Spray tortillas with oil and sprinkle with paprika. Cut each tortilla into 16 pieces and bake for 10 minutes or until golden.

Step 2 of 3

Meanwhile, combine soup, corn, chicken and 1 cup water in a medium saucepan over medium heat and cook for 5 minutes or until warm. Add beans and cook for a further 1 minute or until hot.

Step 3 of 3

Divide soup among bowls and top with cheese, sour cream, coriander and 2 tortilla pieces. Serve with lime wedges and remaining tortilla pieces.
