Description

Elevate your chicken soup by adding in pillowy pearls of potato gnocchi and flavoursome basil pesto.

Method

Step 1 of 4

Place a pot setting it to medium-heat on the stovetop to heat up for 1 minute. Stir in the bacon cooking for 5 minutes until the fat has rendered. Remove the bacon from the pot draining off any excess oil. Add the onions to sweat for 2 minutes before adding in the garlic for 30 seconds.

Step 2 of 4

Tip in the diced tomatoes, saute for 2 minutes. Pour in the chicken broth, once the broth starts to boil reduce the heat and simmer for 15 minutes.

Step 3 of 4

Whisk in the heavy cream, placing the rotisserie chicken, bacon and gnocchi into the pot, simmering for another 10 minutes until the gnocchi is fully cooked.

Step 4 of 4

Stir the pesto into the soup, season with salt and pepper before portioning into bowls.
