Chicken Pasta Soup with Mozzarella Toast

- 700grams chunky pasta sauce
- 2tablespoons basil (small leaves to serve)
- 1 cooked fresh chicken whole
- 70grams organic pasta shells
- 4 cup chicken stock
- 8 slice Turkish bread
- 150grams mozzarella cheese, grated
- 4 cup water
- 400grams coleslaw
Method
Step 1 of 3
Remove meat from chicken, discarding skin and bones. Shred or chop meat. Set aside.
Step 2 of 3
Pour stock, water and pasta sauce into a large deep saucepan. Place over a high heat and bring to the boil. Add coleslaw and pasta. Return to the boil and simmer for 8 minutes or until pasta is just tender. Stir in chicken and simmer for 2 minutes.
Step 3 of 3
Meanwhile, toast bread under a preheated grill for 3 minutes on each side or until golden. Sprinkle one side with cheese and grill for 3 minutes or until cheese is melted and golden. Ladle soup into serving bowls. Sprinkle with basil and serve with mozzarella toast.
