Step 1 of 2
Holding lettuce firmly in your hands, hit root end of lettuce on the benchtop. Twist stem end and remove. Sit lettuce into a large deep bowl. Cover with cold water and stand for 20 minutes. Loosen the leaves so they can be easily removed without tearing. Drain. Separate leaves and arrange on a serving platter.
Step 2 of 2
Combine seafood salad with shallots and parsley in a bowl. Season with salt and pepper. Spoon into lettuce cups.
