- 1/2 cup brown dried lentils
- 2 carrots, peeled and diced
- 1 large onion, chopped
- 2tablespoons continental parsley, chopped
- 1 cup beef stock
- 800grams canned diced tomatoes
- 2tablespoons olive oil
- 1tablespoons oregano, chopped
- 2 garlic cloves, crushed
- 2 stick celery
- 400grams green beans, steamed (to serve)
- 12 gluten-free Sausages

Method
Step 1 of 3
Heat oil in a large pan over medium heat. Add sausages and cook for 5 minutes until well browned. Remove and set aside.
Step 2 of 3
Add onion, celery, carrot and garlic to pan and cook for 5 minutes until softened. Add stock, stirring well to loosen sediment from base of pan. Stir in tomatoes, lentils and oregano and bring to the boil. Return sausages to the pan and simmer for 30 minutes.
Step 3 of 3
Serve hot pot with steamed beans and topped with parsley.
