  • 1 2/3 cup plain flour
  • 1 1/4 cup milk
  • 1/4 small cauliflower, cut into florets
  • 2 leeks, white part only, quartered
  • 1 bunch broccolini, trimmed
  • 4 pork sausages
  • 1/2 cup semi-dried tomatoes
  • 2tablespoons olive oil
  • 4 eggs
  • caramelised onion relish, warmed (to serve)

Method

Step 1 of 5

Preheat oven to 210°C. Whisk eggs and milk together in a large jug. Place flour and a large pinch of salt in a separate bowl. Make a well in the centre and gradually whisk in milk mixture. Cover and set aside.

Step 2 of 5

Place sausages in an 8-cup roasting pan and bake for 10 minutes, turning, or until brown all over.

Step 3 of 5

Meanwhile, toss vegetables in a bowl with oil and season. Add vegetables to pan and bake for a further 10 minutes.

Step 4 of 5

Pour batter over and bake for 20-25 minutes or until puffed and golden.

Step 5 of 5

Serve immediately with relish.
