Description
A hearty yet juicy meatloaf recipe served with an array of seasonal veggies makes this dish a weeknight winner for everyone.
Method
Step 1 of 3
Mix the meatloaf ingredients all together and put in baking paper with a quarter of a cup of water to keep it moist and cook in preheated oven for 15-18 minutes on 190C or until 75C.
Step 2 of 3
Meanwhile Steam the veggies, put the carrots, pumpkin and sweet potato and parsnips onto cook first. When nearly done add the greens, don't overcook.
Step 3 of 3
Slice the meatloaf in thin slices and plat up in bowl over the veggies, sprinkle with chopped dill, chilli flakes and drizzle with balsamic vinegar and season before serving.
