  • 1packets puff pastry sheets (pack of 6)
  • 1 large onion, diced
  • 1 large carrot, peeled and cubed
  • 5 small to medium potatoes, peeled and cubed
  • 1 small swede, peeled and cubed
  • 1 small turnip, peeled and cubed
  • 1 small parsnip, peeled and cubed
  • 2 large wedges of queensland blue pumpkin, cubed
  • 500grams minced beef
  • 1teaspoons salt (to taste)
  • 1teaspoons pepper (to taste)
  • 2 beef stock cubes, crumbled
  • 3tablespoons water
  • 1 egg (to egg wash and seal the pastry)

Description

This is my adaptation of a Cornish Pasty.

Method

Step 1 of 4

Dice all your vegetables to the same size cubes and mix together with the minced beef, stock cubes or powder, salt and pepper and water.

Step 2 of 4

I use an 18cm diameter saucepan lid to cut out my pastry. Place a large spoonful of the mixture into the center of the pastry and egg wash around half the pastry circle. Pull the edges together and seal. I crimp mine but it's up to you how you seal them.

Step 3 of 4

Egg wash the pasties and place in an oven at 220 C for around 20-30 minutes or until the pastry is golden brown.

Step 4 of 4

Depending on how much mixture you can get into the pasty, depends on how many you can make. I used a pack of 6 puff pastry sheets plus 2 extra that I had in the freezer. I cut 1 circle from each sheet and then re-roll the leftovers to best I can to get a few more out. I try not to use this as the pastry becomes a little bit tough and it's hard to get it thin enough. Today, I got 11 pasties and had mixture left over. If I had more puff pastry, I would have got another 4 pasties. It's trial and error.
