Description

Win the weeknight with this simple, comforting recipe for a dinner classic: satay chicken! Pump up the flavour with fresh vegetables and an easy, creamy sauce.

Method

Step 1 of 3

Place chicken in a large bowl. Add curry powder, oil and garlic and mix well. Heat a large deep non-stick frying pan over medium-high heat. Add chicken and cook, stirring occasionally, for 5 minutes or until chicken is browned and almost cooked through. Transfer to a bowl.

Step 2 of 3

Add onion to same pan and cook, stirring, for 2 minutes or until softened slightly. Return chicken mixture to pan and stir to combine. Whisk peanut butter, coconut milk and 1/4 cup warm water in a jug. Add to chicken. Bring to the boil. Reduce heat and simmer for 4-5 minutes or until chicken is cooked and sauce has reduced slightly.

Step 3 of 3

Place noodles in a large heatproof bowl. Cover with boiling water. Stand for 5 minutes or until softened, adding broccoli in the last 2 minutes of standing. Stir with a fork to separate noodles. Drain. Spoon noodles into bowls. Top with chicken satay and broccoli. Serve sprinkled with coriander and chilli.
