- 3teaspoons extra virgin olive oil
- 400grams Woolworths COOK simmer veggie mix
- 400grams Woolworths RSPCA Approved chicken breast fillets, cut into 2cm cubes
- 1/4 cup plain flour
- 1L Woolworths liquid chicken stock
- 1 cup Woolworths full cream milk
- 150grams Woolworths fettuccine
Description
Warm up with this comforting, velvety soup packed with classic flavours that will impress everybody. It's easy on the wallet, too.
Method
Step 1 of 4
Heat 2 tsp oil in a large (20cm base measurement) saucepan. Add veggie mix and cook, stirring often, for 5 minutes or until tender. Transfer to a plate.
Step 2 of 4
Heat remaining oil in saucepan over medium heat. Add chicken. Cook, stirring often, for 4 minutes or until light golden. Add flour and stir to coat.
Step 3 of 4
Add 1 cup stock and mix until flour dissolves and the mixture is well combined. Stir in milk and remaining stock. Return vegetables to saucepan. Bring to a gentle simmer over medium heat.
Step 4 of 4
Break pasta in half. Add to saucepan. Cook, stirring often, for 8 minutes or until pasta is al dente. Season with freshly cracked black pepper. Divide among serving bowls. Serve.
