  • 2teaspoons extra virgin olive oil
  • 500grams Woolworths feta & spinach chicken sausages
  • 250grams cup mushrooms, sliced
  • 1/4 bunch thyme
  • 1 1/4 cups Woolworths medium-grain rice
  • 3 cups Woolworths chicken stock, warmed
  • 30grams Woolworths Australian parmesan

Description

This flavourful, speedy, low-cost risotto with fresh mushrooms and juicy chicken sausage is perfect for busy weeknights or a cosy weekend meal.

Method

Step 1 of 4

Heat oil in a large frying pan over medium-high heat. Cook sausages for 10 minutes, turning often. Transfer to a chopping board.

Step 2 of 4

Add mushrooms to frying pan. Cook, stirring often, for 5 minutes or until golden and tender.

Step 3 of 4

Pick leaves from three-quarters of the thyme. Add rice, stock, 1 cup water and picked thyme leaves. Bring to a boil. Reduce heat to medium and simmer for 15-20 minutes or until rice is tender. Slice sausages, then add to risotto and stir to combine.

Step 4 of 4

Divide risotto among bowls. Top with parmesan and remaining thyme.
