Description
Sweet chilli and garlic pork pappardelle combines the comforting flavours of Italian food with the flavours of Asian style dishes. Slightly sweet, spicy and punchy with garlicky flavours, these noodles are the bomb.
Method
Step 1 of 3
Cook pasta in a large saucepan of boiling water for 10-12 minutes or until al dente. Drain, reserving 1/2 cup cooking liquid.
Step 2 of 3
Meanwhile, heat oil in a large, deep frying pan and heat over medium-high heat. Add pork and cook, stirring to break up any lumps, for 3 minutes or until browned. Add lentils and garlic and cook, stirring, for 30 seconds or until fragrant. Add kecap manis, sweet chilli, cream and reserved cooking liquid. Bring to the boil. Reduce heat and simmer for 5 minutes or until reduced slightly. Top with pak choy. Cover with a tight-fitting lid. Turn heat off. Stand for 3 minutes or until pak choy wilts slightly.
Step 3 of 3
Add pasta and half of the onion to pork mixture and toss to combine. Spoon into bowls. Serve sprinkled with remaining onion.
