- 400grams pork mince
- 2 Continental beef stock pot sensations
- 1tablespoons extra virgin olive oil
- 400grams Woolworths diced tomatoes with basil & oregano
- 125grams dried Vetta smart fibre spaghetti, broken into 4-5cm pieces
- 500grams Woolworths winter veg mix
- 30grams Woolworths Australian parmesan, finely grated
Description
Settle in for the night with tender meatballs and hearty vegetables in a rich, aromatic broth. This comforting, affordable soup will keep everyone happy.
Method
Step 1 of 4
Combine mince and half of one stock pot in a large bowl. Using 1 tbs at a time, roll mixture into meatballs.
Step 2 of 4
Heat oil in a large saucepan over medium-high heat. Cook meatballs for 10 minutes or until browned. Transfer meatballs to a large plate.
Step 3 of 4
Add tomato, 3 cups water and remaining stock pot mixture to saucepan. Bring to the boil. Reduce heat to medium. Add pasta and simmer for 10 minutes or until pasta is tender, adding vegetables and meatballs halfway through.
Step 4 of 4
Divide minestrone among bowls. Serve topped with parmesan.
