  • 2teaspoons extra virgin olive oil
  • 2tablespoons Mr Chen's Thai green curry paste
  • 400milliliter Woolworths coconut cream
  • 500grams Woolworths prep set go frozen stir-fry vegetables
  • 450grams Woolworths microwave long-grain white rice
  • 1/4 bunch coriander, sprigs picked

Description

This affordable Thai green fish curry packs a punch of flavour with its fragrant coconut broth, stir-fried veggies and tender fish pieces.

Method

Step 1 of 4

Coarsely cut each fillet into 6cm pieces.

Step 2 of 4

Heat oil in a large, deep frying pan over medium heat. Add paste. Cook, stirring constantly, for 1 minute. Shake coconut cream well to combine. Add to pan. Stir to combine. Bring to a simmer over medium heat.

Step 3 of 4

Stir in vegetables until well combined. Add fish. Return to a gentle simmer over medium heat. Cover and cook for 6-8 minutes or until fish and vegetables are cooked through and tender.

Step 4 of 4

Heat rice following packet instructions. Scatter curry with coriander. Serve with rice.
