  • 1 head broccoli
  • 200grams chorizo, cut into 1cm-thick slices
  • 270grams Woolworths beetroot & feta salad kit
  • 420grams no-added-salt lentils, drained, rinsed
  • 2tablespoons natural almonds, coarsely chopped
  • extra virgin olive oil cooking spray

Description

Six ingredients, 30 minutes and dinner for four: it's really that easy with this colourful salad featuring leafy greens, spicy chorizo, bright broccoli and nutty lentils.

Method

Step 1 of 4

Preheat oven to 200°C/180°C fan-forced. Cut broccoli into small florets. Trim stem and thinly slice.

Step 2 of 4

Spread florets and stem over base of a large shallow baking dish. Spray with oil. Place chorizo in a single layer on a separate small tray or ovenproof dish. Spray with oil. Bake broccoli and chorizo for 20 minutes. Remove from oven.

Step 3 of 4

Carefully scatter leaves from salad kit over broccoli, reserving feta, walnut and dressing sachets. Return to oven for 2 minutes. Remove and carefully toss gently until leaves are warmed through and slightly wilted.

Step 4 of 4

Add lentils and half of the chorizo, half of the feta and half of the walnuts to broccoli mixture. Carefully toss to combine. Place dressing in a small bowl. To serve, scatter broccoli with almonds and remaining chorizo, walnuts and feta. Season with freshly cracked black pepper. Drizzle with dressing and a little of the oil from chorizo cooking tray.
