  • 2tablespoons extra virgin olive oil
  • 1 brown onion, diced
  • 2 carrots, chopped
  • 1/4 bunch celery, sliced
  • 1tablespoons smoked paprika
  • 40grams Woolworths French onion soup mix
  • 1L salt-reduced chicken stock
  • 300milliliter cooking cream
  • 2/3 cup dried risoni
  • 2 cups shredded chicken
  • 1 cup shredded tasty cheese
  • 1/4 cup continental parsley, leaves picked

Description

Ready in just 25 minutes, this creamy, colourful soup is a perfect dinnertime delight. It features carrots, onions, chicken and cheese for a powerhouse of flavour in every bite.

Method

Step 1 of 4

Press switch to ‘cook’ mode in a 10-cup-capacity rice cooker. Heat oil in rice cooker, then add onion, carrot, celery and paprika and cook, stirring, for 10 minutes or until just softened.

Step 2 of 4

Add soup mix, stock, cream and 1 ½ cups water. Continue to cook for 5 minutes or until mixture is simmering.

Step 3 of 4

Stir pasta, chicken and half of the cheese into stock mixture and cook for 5 minutes or until pasta is cooked.

Step 4 of 4

Divide soup among bowls. Top with parsley and remaining cheese. Season with freshly cracked black pepper and serve.
