  • 3teaspoons extra virgin olive oil
  • 1/2 green cabbage, cut into 4 wedges
  • 210 no-added-salt corn kernels, drained, rinsed
  • 125grams black bean beans, drained, rinsed
  • 1/4 small red onion, thinly sliced
  • 1/4 bunch coriander, sprigs picked
  • 1/3 cup buttermilk
  • 1/4teaspoons Cajun spice blend

Description

This colourful salad is a budget-friendly delight, combining smoky roasted cabbage, sweet corn kernels, crunchy red onion, hearty black beans, and a creamy Cajun dressing for a flavourful Southern-inspired side dish.

Method

Step 1 of 4

Preheat oven to 200°C/180°C fan-forced. Brush a baking tray with some of the oil. Place cabbage wedges, cut-side down, on tray. Brush the top of cabbage with oil. Bake for 20 minutes or until lightly golden.

Step 2 of 4

Meanwhile, combine corn, beans, onion and coriander in a bowl.

Combine buttermilk and spice blend in a small bowl. Season.

Step 4 of 4

Arrange hot cabbage on a serving platter. Scatter with corn mixture. Drizzle with dressing.
