  • 125grams salmon
  • 1/2 cup lettuce
  • 1/2 cup beans
  • 1/2 cup peas
  • 6 cherry tomatoes
  • 2tablespoons fetta (optional)
  • 1/4 cup artichokes (optional)
  • 2teaspoons capers
  • 1 slice red onion (optional)
  • 2tablespoons salad dressing
  • 4-5 baby cornichons

Description

Super easy and quick. Fabulous for a hot night and can be made for 1 or 10

Method

Step 1 of 8

Prepare all ingredients

Cook peas and beans. Set aside to cool.

Step 3 of 8

Cook salmon in hot pan. Two to three minutes on the first side, turn over and cook 1 to 2 more minutes Set aside

Step 4 of 8

Construct salad I start with lettuce, then beans, cherry tomatoes, artichokes, peas, salmon, fetta, capers, gherkins and onions.

And going (I flake my salmon as I prefer it that way but you could place the salmon fillet on top whole)

Before adding the dressing. My salad dressing is a mixture of Paul Newmans Classic with Tzatziki but use whatever you like. Even just lemon juice is fabulous

Keep going and finally sprinkle (in a chef-y way) the last couple of ingredients
