- 1tablespoons vegetable oil
- 1 small yellow onion, peeled, diced small
- 2 cloves garlic, peeled, minced
- 1 stalk celery, trimmed, diced small
- 1 medium carrot, peeled, diced small
- 4 cups chicken broth, ready-made
- 250grams rotisserie chicken, bones removed, diced
- 230grams vegetable dumplings, ready-made
- 1 pinch salt (to taste)
- 1 pinch pepper (to taste)
Description
Switch out the noodles for dumplings the next time you have a craving for chicken soup - perfect warming comfort food.
Method
Step 1 of 3
Add the oil to a pot setting it to medium-heat on the stovetop to heat up for 1 minute. Add the onions to sweat for 2 minutes before adding in the garlic, celery and carrots cooking for another 2-3 minutes until the vegetables start to soften.
Step 2 of 3
Pour in the chicken broth, once the broth starts to boil reduce the heat and simmer for 15 minutes.
Step 3 of 3
Place the rotisserie chicken and dumplings into the pot, simmering for another 8-10 minutes to warm and cook the dumplings. Season with salt and pepper before adding to bowls.
