  • 225grams mushrooms, divided, 113 g peeled and minced, 112g finely sliced

  • 30 wanton wrappers
  • 2L chicken stock
  • 225grams bok choy
  • 110grams sugar snap peas

Description

Warm yourself up with this filling and delicious prawn dumpling soup. Make a large batch and freeze the wantons for future cravings.

Method

Step 1 of 3

Put the prawn, minced mushrooms, finely chopped 2 stalks green onions in a bowl. Season with 1 tablespoon soy sauce, sesame oil, grated ginger, 0.25 teaspoon white pepper and 0.25 teaspoon salt. Mix thoroughly by hand until well incorporated.

Step 2 of 3

Fill the centre of the wonton wrapper with a heaping teaspoon of the filling. Wrap the edges around the filling and repeat to the rest of the wrappers and filling. To cook the wontons, bring a large pot of water to boil. Drop the wontons and cook them for 4 to 5 minutes or until they float to the surface. Drain and set aside.

Step 3 of 3

Heat the chicken stock in a pot and bring to boil, then reduce to simmer. Add the sliced ginger, sliced mushrooms, bok choy and sugar snap peas, and let it simmer for two minutes. Season the broth with the remaining soy sauce, salt and white pepper. Add the cooked wontons. Upon, top it with green onions and sesame oil.
