- 1teaspoons balsamic vinegar
- 3teaspoons extra virgin olive oil
- 100grams prosciutto slices, halved lengthways
- 1/2 rockmelon, peeled, cut into thick wedges
- 2 Woolworths little gem lettuce combo, leaves separated
- 110grams bocconcini, drained, halved
- 1/2 bunch mint, leaves picked
Description
Sweet, fresh rockmelon and salty prosciutto are a perfect match. Add crunchy cos lettuce, creamy mozzarella and a balsamic dressing for a salad to remember.
Method
Step 1 of 2
Whisk vinegar and oil in a small jug. Season.
Step 2 of 2
Wrap prosciutto around rockmelon wedges. Arrange lettuce, wrapped rockmelon, bocconcini and mint leaves in a shallow bowl. Serve drizzled with vinegar mixture.
