- 225grams garlic bread, roughly chopped
- 1/4 cup blanched hazelnuts
- 1/4 cup continental parsley, leaves picked
- 1/3 cup extra virgin olive oil
- 1teaspoons sea salt flakes
- 1/2 lemon, zested, juiced
- 2 bunches asparagus, trimmed
Description
Take roasted asparagus to the next level with a crunchy pangrattato (Italian-style breadcrumbs). This delectable side will jazz up any meal.
Method
Step 1 of 4
Preheat oven to 200°C/180°C fan-forced. Line 2 baking trays with baking paper.
Step 2 of 4
Place garlic bread, hazelnuts, parsley, 2 tbs oil, salt flakes and zest in a food processor and process until mixture resembles a coarse crumb. Spread out evenly over 1 tray.
Step 3 of 4
Arrange asparagus on the other tray. Drizzle with lemon juice and remaining oil, tossing to coat. Bake crumb mixture and asparagus for 12 minutes, stirring and turning halfway through, or until asparagus is cooked and pangrattato is golden.
Step 4 of 4
Transfer asparagus to a serving plate and serve drizzled with pan juices and scattered with 1 cup pangrattato.
