  • 1/3 cup olive oil
  • 1 onion, sliced
  • 4 red capsicums, deseeded and sliced
  • 2 cloves garlic, crushed
  • 125grams toasted walnuts, chopped
  • 1 lemon, grated zest and juice

Method

Step 1 of 3

Heat the oil in a heavy frying pan over a low heat. Add the onion, and gently sweat for about 5 minutes until soft and translucent.

Step 2 of 3

Tip in the capsicums, and cook for about 30 minutes until soft, stirring regularly. Stir through the garlic, and cook a further 30 seconds, or until the garlic has turned white.

Step 3 of 3

Transfer the capsicum mixture to a blender or food processor. Add the walnuts and lemon zest and juice, and blend to a chunky purée. Serve with warm pitta breads or crudités such as carrot or cucumber batons for dipping.
