Description
Thinly rolled out bread baskets baked until crisp make a versatile canapé base for so many fillings. They will become an irreplaceable part of your party repertoire.
Method
Step 1 of 8
Preheat oven to 180°C. Place the sliced bread on a chopping board and, using a sharp knife, cut off the crusts.
Step 2 of 8
Using a rolling pin, press down heavily onto each slice of bread in turn to roll it out thinly, then set aside.
Step 3 of 8
Using a pastry brush, brush each flattened bread slice all over with a little of the olive oil, then set aside. Make sure the bread is covered with the oil.

Use a cookie cutter to stamp out 4 rounds per slice. Bread slice sizes can differ so you may get more or less than 4 rounds.

Push each bread round carefully into the holes of a mini muffin tin, pressing down evenly so the croustades will be flat-bottomed.

Bake in the oven for 10 minutes, or until the croustades are lightly coloured and crisp, then remove the tin from the oven.

Remove the croustades from the tin and allow to cool on a wire rack. At this stage you can store them in an airtight container.

Fill the croustades with your chosen filling 45 minutes before serving and watch them fly off the table!
