  • 2tablespoons vanilla extract
  • 1 small lemon, zest and juice
  • 2tablespoons raw caster sugar
  • 1tablespoons plain flour
Olive Oil Polenta Crumble
  • 1/3 cup Cockatoo Grove Organic Australian Extra Virgin Olive Oil
  • 3tablespoons Cockatoo Grove Organic Australian Extra Virgin Olive Oil (for extra)
  • 1 1/2 cup plain flour
  • 3/4 cup polenta
  • 3/4 cup brown sugar (firmly packed)
  • 1 pinch sea salt
  • 2tablespoons vanilla extract

Method

Step 1 of 7

Preheat your oven to 180°C/350°F (fan forced).

Step 2 of 7

In a 28x23cm baking dish add the frozen berries, 2 tbs vanilla, lemon zest and juice, 2 tbs sugar, and 1 tbs flour, then stir to combine.

Step 3 of 7

In a medium-sized mixing bowl add the flour, polenta, brown sugar, salt, olive oil, and vanilla, and stir to combine.

Step 4 of 7

Using your hands press some of the mixture together to form small clumps then sprinkle the polenta mixture over the berries.

Step 5 of 7

Bake at 180°C/350°F for 40 minutes.

Step 6 of 7

Remove from the oven and allow to rest for 10 minutes before serving.

Step 7 of 7

Serve with vanilla ice cream and a little drizzle of Cockatoo Grove Organic Australian Extra Virgin Olive Oil.
