  • 1/2 cup Sunbeam raisins
  • 1/2 cup Sunbeam glacé cherries
  • 200grams mini pink and white marshmallows
  • 1 1/2 cups pistachio kernels, toasted
  • 400grams milk chocolate, roughly chopped
  • 30grams unsalted butter

Description

Chewy, crunchy, sweet and chocolatey, you can't go wrong with this dreamy rocky road recipe featuring raisins, glacé cherries and toasted pistachios.

Method

Step 1 of 5

Grease a 20cm (6cm deep) square cake pan. Line base and sides with baking paper.

Step 2 of 5

Place raisins, cherries, marshmallows and pistachios in a large bowl and stir to combine. Scatter 1 cup fruit mixture over base of pan.

Step 3 of 5

Place chocolate and butter in a heatproof bowl. Place bowl over a saucepan of simmering water (ensuring base of bowl does not touch water). Stir with a metal spoon until smooth. Remove bowl from heat. Stand for 5 minutes to cool slightly.

Step 4 of 5

Add chocolate mixture to fruit mixture in bowl and stir to coat. Spoon mixture over fruit mixture in pan, pressing gently with back of a spoon to flatten slightly. Refrigerate for 2 hours or until set.

Step 5 of 5

Turn out rocky road onto a chopping board and cut into 4 even rows. Wrap in cellophane to gift.
