- 1 Old El Paso regular tortillas
- 500grams Cook chicken breast strips Mexican style
- 3 spring onions
- 2teaspoons extra virgin olive oil
- 1 1/4 cup Mexican inspired cheese

Method
Step 1 of 4
Preheat oven to 160°C/140°C fan-forced. Heat oil in a frying pan over medium-high heat and cook chicken, stirring, for 5 minutes or until cooked through. Transfer to a chopping board and roughly chop.
Step 2 of 4
Preheat a sandwich press. Place 1 tortilla on a flat surface. Top with one-fifth of chicken. Scatter over one-fifth of onion and ¼ cup cheese. Top with another tortilla. Repeat with remaining tortillas, chicken, onion and cheese to make 5 quesadillas.
Step 3 of 4
Place 1 quesadilla in sandwich press and cook for 2 minutes or until golden and heated through. Transfer to a baking tray and place in oven to keep warm. Repeat with remaining quesadillas.
Step 4 of 4
Cut quesadillas into pieces and serve scattered with extra onion.
