- 2 cloves garlic, crushed
- 1kilograms green prawns, cutlets
- 1 small red chilli, finely chopped
- 1 lemon, juiced and rind finely grated
- 1 pinch black pepper (to season)
- 1/3 cup olive oil
- 2tablespoons oregano leaves, finely chopped
- 1 pinch pink salt ground (to taste)
- 2 lemon wedges (to serve)

Method
Step 1 of 5
Using a small sharp knife, cut along the underside of green prawn cutlets and open out flat. Place into a shallow ceramic dish.
Step 2 of 5
Deseed 1 long red chilli and 1 small red chilli and finely chop. Put into a bowl. Add olive oil, garlic cloves, finely grated rind of lemon, lemon juice, finely chopped oregano leaves, salt and pepper.
Step 3 of 5
Pour over prawns and turn to coat. Cover and refrigerate for 1 hour.
Step 4 of 5
Preheat a barbecue hot plate over a high heat. Grease with 1 tbs olive oil. Add prawns and cook for 1-2 minutes each side or until cooked through.
Step 5 of 5
Serve with lemon wedges.
