- 500grams diced chicken breast
- 1/2 cup crunchy peanut butter
- 1tablespoons peanut oil
- 2tablespoons soy sauce
- 2tablespoons fish sauce
- 3tablespoons lime juice
- 2teaspoons garlic chilli sauce
- 3 spring onions
- 3 carrots
- 1 red capsicum

Description
A delicious satay inspired peanut butter stir fry sauce.
Method
Step 1 of 5
If marinating chicken in sauce overnight or for a few hours prior to cooking make the sauce by adding together soy sauce, peanut oil, fish sauce, garlic chilli sauce, lime juice and peanut butter before mixing in chicken and putting back in the fridge to marinate.
Step 2 of 5
If cooking straight up heat peanut oil in a large fry pan over medium high heat and add chicken to cook. Then add soy sauce, peanut butter, garlic chilli sauce, fish sauce and lime juice stirring into chicken to coat.

Cut carrots and capsicum into match sticks and dice up spring onions.
Step 4 of 5
Once chicken is cooked and coated in the sauce add vegetables and stir. I like to add a lid a let it steam the veggies for 5min or so to help them cook through.
Step 5 of 5
Once cooked serve on it's own, on a bed of rice or in lettuce leaf cups.
