  • 1 medium white onion, peeled and sliced
  • 1tablespoons canola oil
  • 2 cloves garlic, peeled and sliced
  • 1 1/3 cup cream
  • 3 medium capsicum, de-seeded and halved
  • 1 pinch salt
  • 1tablespoons chilli flakes
  • 400grams pasta, cooked as per packet instructions
  • 200grams chorizo, sliced

Description

A deliciously spiced pasta sauce with salty chorizo.

Method

Step 1 of 8

Pre-heat the oven to 180°C/160°C fan-forced.

Step 2 of 8

Place the capsicum, onion and garlic on a roasting tray, drizzle with oil and roast for 20 minutes.

Step 3 of 8

While the vegetables are roasting, cook the pasta as per packet instructions and the drain and set to one side.

Step 4 of 8

Heat up a non-stick pan to a medium heat and fry the chorizo for 5 minutes turning occasionally.

Step 5 of 8

Remove the vegetables from the oven and remove the skin from the capsicum.

Step 6 of 8

Add the capsicum flesh and other veg to a blender with the cream, salt, and chilli and blend until smooth.

Once blended, add the sauce to the pan with the chorizo and cook while stirring for 5 minutes.

Step 8 of 8

Add the pasta to the pan and combine while cooking for 5 minutes before serving.
