  • 150grams walnuts
  • 2tablespoons olive oil
  • 3 clove garlic, peeled and minced
  • 350grams penne pasta
  • 1teaspoons chilli flakes
  • 75grams parmesan

Description

This speedy and simple pasta dish uses ready roasted red capsicums to make a rich and thick sauce.

Method

Step 1 of 4

Heat a dry pan on medium heat and toast the walnuts for 2-3 minutes. Tip the walnuts into a food processor and blitz to a flour consistency.

Step 2 of 4

Add the capsicums, garlic, chilli and oil and blitz to a coarse paste. Set aside.

Step 3 of 4

Cook the pasta according to pack instructions, drain and reserve a ladleful of starchy water. Tip the pasta back into the pan, add the capsicum sauce and starchy water and cook for 2-3 minutes.

Step 4 of 4

Serve with parmesan on top.
