- 500grams short pasta (like penne or rigatoni or farfalle)
- 1/2 medium brown onion
- 200grams woolworths concentrated australian tomato paste
- 30milliliter vodka
- 1/2 cup cream
- 1/2 cup grated parmesan or grana padano cheese (plus extra for serving at the table)
- 1/2teaspoons garlic powder

Quirky named but simple and very enjoyable dish. It will become a fave in a "shot"!
Method
Step 1 of 8
Finely dice onion and saute at medium to low heat in large open frypan that will hold your final cooked pasta.
Step 2 of 8
In a large pot you can start your pasta cooking at a rolling boil in lots of slightly salted water (check your cooking time on the pack as there is lots of variability).

Once your onion is translucent, add the tomato paste and stir it for a few minutes as it cooks out.

Lower the heat and add your shot of vodka to the onion and tomato while stirring well to deglaze your pan too.

Keep the heat low and add the cream and garlic powder, stirring gently until you get a consistent sauce throughout. If it looks too dry, use a ladle and scoop into it some starchy water from your boiling pot of pasta.

Turn off the heat and add your grated cheese while continuing to stir to combine all the ingredients.

When your pasta is cooked to your liking, drain the water using your preferred method and add the pasta to the sauce. Fold the pasta and sauce together to gain an even consistency and coating to all the pasta.

Serve with extra grated cheese and a sprig of fresh basil.
