  • 1 red onion
  • 1tablespoons extra virgin olive oil
  • 250grams risoni
  • 1/4 cup Woolworths basil pesto
  • 2 cups sliced cooked chicken
  • 2 tomatoes, chopped
  • 1 Lebanese cucumber, halved lengthways, sliced diagonally
  • 50grams Woolworths Danish feta, crumbled
  • 1/4 bunch basil, leaves picked

Description

Make this one-pan pesto pasta tonight for an easy weeknight meal with minimum clean-up.

Method

Step 1 of 3

Finely chop half of the onion. Heat oil in a large, deep frying pan over medium-high heat. Add chopped onion and cook for 4 minutes, stirring, or until softened. Add risoni, then cook, stirring, for 1 minute.

Step 2 of 3

Add pesto and 2 1/3 cups water and bring to the boil over high heat. Reduce heat to medium-low and simmer, covered, for 10-12 minutes, stirring occasionally until risoni is tender.

Step 3 of 3

Divide risoni mixture among serving bowls. Top with chicken, tomato, cucumber, feta, basil and remaining onion. Season with pepper. Serve.
