  • 1 clove garlic, crushed
  • 3 sheet frozen puff pastry
  • 30grams butter
  • 3 cups green beans (to serve)
  • 2 onions, finely chopped
  • 200grams mushrooms, sliced
  • 1/4 cup tomato pizza paste
  • 750grams minced beef
  • 2 eggs
  • 2teaspoons fresh thyme
  • 1/2 cup breadcrumbs

Method

Step 1 of 4

Heat butter in a frying pan. Add mushroom and thyme and cook for 5 minutes or until golden. Set aside. Combine breadcrumbs, mince, onion, paste, egg and garlic in a bowl.

Step 2 of 4

Preheat oven to 200°C. Shape meat mixture into a log, about 30cm long. Join 2 sheets of the pastry together and press seam together firmly. Place 1/4 of the drained mushroom in the centre of pastry. Place mince on top. Press remaining mushroom on top of the mince.

Step 3 of 4

Fold pastry over to enclose. Place onto a baking tray, seam-side down and tuck under the ends. Lightly brush egg over the pastry. Cut the remaining pastry sheet into 1cm-wide strips and use to decorate log in a criss-cross pattern.

Step 4 of 4

Bake for 40 minutes or until golden. Cut beef wellington into thick slices and serve with green beans.
