Description

The perfect side dish for any BBQ. Known as ribs because they curl up into a rib shape when cooked and are eaten the same way.

Method

Step 1 of 4

Clean and prep the corn cobs, then with a sharp knife split the cobs down the middle then into quarters. (I do this by standing the cob on its end)

Step 2 of 4

Give the sliced corn a light coat of olive oil then gently rub it in to fully coat it, apply a light sprinkle of coarse salt (optional)

Step 3 of 4

Place the corn on your bbq (they can also be cook in an oven). And cook until char marks appear, usually 15 mins. While waiting for the corn to cook in a small mixing bowl add the ranch dressing and sour cream and mix until fully combined.

Step 4 of 4

Once the corn is cooked remove from the bbq. Using a basting brush apply a coat of the sour cream mix then add a light dusting of smoked paprika to finish them off. Arrange on a plate and serve
