- 7 slices country-style bread, cut into small cubes
- 1 slices lemon (to serve)
- 1/3 cup water, warm
- 1 pinch sweet paprika
- 1/3 cup olive oil
- 4 bacon slices
- 3 cloves garlic
- 12 plump scallops
- 1 pinch salt
- 2tablespoons parsley (to garnish)
Method
Step 1 of 4
Put the bread into a bowl. Mix the measured water with a little salt and the paprika, then pour it over the bread and let soak for 30 minutes.

Heat ¼ cup of the oil in a large skillet, add the bacon and garlic, and cook until the bacon is crisp. Remove from the pan, discard the garlic, and break the bacon into small pieces.
Step 3 of 4
Squeeze any excess water from the bread, then cook in the pan for 10 minutes, stirring frequently, until crisp and golden. Return the bacon pieces and heat through.
Step 4 of 4
Meanwhile, in a separate skillet, heat the remaining oil. Pat the scallops dry with paper towels, season with salt, and then sauté for 2-3 minutes on each side, until golden and just cooked through. Serve sprinkled with the bacon bread crumbs and parsley, along with lemon slices.
