  • 1teaspoons Mexican chilli powder
  • 285grams whole piquillo peppers
  • 1 avocado
  • 2 tomatoes
  • 1 red onion
  • 1 orange
  • corn chips and coriander sprigs
  • 1/2 iceberg lettuce
  • 420grams no added salt black beans, rinsed
  • 400grams Funky Fields mince
  • 1/4 cup olive oil
  • 1 bunch oregano, leaves picked
  • 2 garlic cloves
  • 400grams no added salt diced tomatoes

Method

Step 1 of 2

Heat oil in a frying pan over high heat. Add onion and cook for 3 minutes or until softened. Add garlic, oregano, zest, mince and chilli powder and cook, breaking up mince with a wooden spoon, for 4 minutes or until browned. Stir in beans, peppers, canned tomatoes and 1 1/2 cups water. Cook for 10-12 minutes or until reduced and thickened. Add orange juice.

Arrange lettuce, mince, tomato and avocado into bowls. Serve with corn chips, orange wedges, coriander extra chilli powder.
