- 1teaspoons Mexican chilli powder
- 285grams whole piquillo peppers
- 1 avocado
- 2 tomatoes
- 1 red onion
- 1 orange
- corn chips and coriander sprigs
- 1/2 iceberg lettuce
- 420grams no added salt black beans, rinsed
- 400grams Funky Fields mince
- 1/4 cup olive oil
- 1 bunch oregano, leaves picked
- 2 garlic cloves
- 400grams no added salt diced tomatoes
Method
Step 1 of 2
Heat oil in a frying pan over high heat. Add onion and cook for 3 minutes or until softened. Add garlic, oregano, zest, mince and chilli powder and cook, breaking up mince with a wooden spoon, for 4 minutes or until browned. Stir in beans, peppers, canned tomatoes and 1 1/2 cups water. Cook for 10-12 minutes or until reduced and thickened. Add orange juice.
Step 2 of 2
Arrange lettuce, mince, tomato and avocado into bowls. Serve with corn chips, orange wedges, coriander extra chilli powder.
