  • 300grams Woolworths microwave quick spiral pasta
  • 1 large red capsicum, quartered, deseeded
  • 1tablespoons Woolworths extra virgin olive oil
  • 1teaspoons balsamic vinegar
  • 60grams baby rocket leaves
  • 80grams Woolworths Greek-style feta
  • 1 small red onion, roughly chopped
  • 125grams cherry tomatoes, quartered
  • 1tablespoons pepitas

Description

Make this colourful pasta salad recipe ahead of time and take it to work for lunch. The balsamic dressing brings all the Mediterranean flavours together.
Instruction tip
Variation:
To make this a gluten-free recipe, replace the pasta with cooked quinoa, buckwheat or gluten-free pasta.

Method

Step 1 of 4

Preheat grill to high. Cook pasta according to packet instructions. Set aside to cool.

Step 2 of 4

Meanwhile, place capsicum, skin-side up, on a foil-lined tray and grill for 5 minutes or until skin has blistered and blackened. Transfer to a heatproof bowl. Cover and stand for 5 minutes. Peel skin and discard. Thinly slice.

Step 3 of 4

Whisk oil and vinegar in a small bowl. Season with pepper.

Step 4 of 4

Divide dressing between 2 x 400ml jars. Layer pasta, capsicum and half of the rocket into jars. Roughly crumble in feta, then add onion, tomato, remaining rocket and pepitas. Seal with lids and refrigerate until ready to serve.
