  • 2 Woolworths little gem lettuce, leaves separated
  • 45grams traditional bocconcini, torn
  • 2 yellow nectarines, halved, destoned, cut into thick wedges
  • 2 celery stalks, thinly sliced
  • 2tablespoons walnuts, toasted, roughly chopped
  • 1tablespoons white balsamic vinegar
  • 2teaspoons Woolworths extra virgin olive oil

Description

This delicious salad features succulent chicken breast, sweet nectarines, brown rice and creamy bocconcini is perfect for a light dinner or easy work lunch.

Method

Step 1 of 3

Spray a chargrill pan with oil and heat over medium heat. Cook chicken for 15 minutes, turning, or until cooked through. Transfer to a plate, cover loosely with foil and rest for 5 minutes. Thinly slice.

Step 2 of 3

Meanwhile, cook rice mix according to packet instructions.

Step 3 of 3

Place lettuce, rice, bocconcini, nectarine, celery, walnuts and chicken in a large bowl and toss to combine. Divide salad among bowls. Combine vinegar and oil in a small bowl. Season with pepper. Serve salad drizzled with dressing.
