  • 1 lemon, zested, thinly sliced
  • 20grams parmesan, finely grated
  • 1/2 bunch continental parsley, leaves picked, coarsely chopped
  • 2 bunch broccolini

Description

Try this delicious side of roasted broccolini topped with cheesy breadcrumbs. It pairs well with grilled chicken, salmon or lamb.

Method

Step 1 of 5

Preheat oven to 220℃ / 200℃ fan-forced. Grease and line 2 large baking trays with baking paper.

Step 2 of 5

Lightly spray bread with oil and place on 1 tray. Bake for 20 minutes, turning halfway, or until golden brown and crisp. Cool completely.

Step 3 of 5

Place bread in a food processor with zest, parmesan and parsley. Process for 10 seconds or until coarse crumbs form. Season with pepper.

Step 4 of 5

Place broccolini, in a single layer, on remaining tray. Lightly spray with oil and season with pepper. Arrange lemon slices around broccolini. Roast for 15 minutes or until tender and broccolini begins to char.

Step 5 of 5

Serve broccolini sprinkled with parmesan crumb.
