  • 4 free range eggs
  • 1/2 bunch basil, leaves picked

Description

Put a healthier twist on the classic Florentine pizza with this nutritionally approved recipe. This delicious version is packed with veggies and cheese.

Method

Step 1 of 3

Preheat oven to 230℃/210℃ fan-forced. Line two baking trays with baking paper. Place bread rounds on trays and brush with 2 tsp oil.

Step 2 of 3

Heat remaining oil in a large saucepan over medium heat. Cook herbs and spinach, stirring, for 1 minute or until spinach has just wilted. Season with pepper.

Step 3 of 3

Spread cottage cheese evenly over each bread round. Top with spinach mixture and tomato, leaving space in the centre of pizza for the eggs. Crack 2 eggs into the centre of each pizza. Bake for 14 minutes or until egg is cooked through and bases are golden. Serve topped with basil.
