  • 1/2 lemon, juiced
  • 1/2 bunch kale, stems removed, leaves roughly torn (see Tip)
  • 2 small navel oranges, peeled, thinly sliced into rounds
  • 1 ruby red grapefruit, peeled, thinly sliced into rounds
  • 1 small red onion, thinly sliced into rounds
  • 1/2 small avocado, deseeded, sliced into wedges
  • 1/4 cup light Greek-style yoghurt
  • 2teaspoons finely chopped dill
  • 1/4 cup Woolworths dry roasted almonds, roughly chopped

Looking for a kale salad recipe with a twist? Try this healthier salad featuring this much-loved leafy green and an array of zingy citrus. It's so easy to make.

Method

Step 1 of 2

Combine oil and lemon juice in a large bowl. Add kale leaves and massage for 2 minutes or until tender.

Step 2 of 2

Transfer kale to a platter, reserving any juice. Top with orange, grapefruit, onion and avocado. Combine yoghurt, dill and reserved juice in a small bowl. Drizzle yoghurt mixture over salad and season with pepper. Scatter over almonds and serve.
