- 2 wholemeal Lebanese bread rounds, roughly torn
- 5milliliter olive oil cooking spray
- 1/2teaspoons sumac
- 225grams falafel balls
- 1 bunch continental parsley, leaves picked
- 1/2 cup Greek-style yoghurt
- 1 lemon, juiced
- 2 tomatoes, finely chopped
- 3 spring onions, thinly sliced
- 1/2 bunch mint, leaves picked, 1/2 finely chopped
- 2tablespoons Woolworths extra virgin olive oil
- 2 little gem lettuce combo, leaves separated
- 250grams Qukes baby cucumbers, halved lengthways
Description
Save time with ready-made falafels and have this sensational salad on the table in 20 minutes. The whole family will love this filling vegetarian dish.
Method
Step 1 of 3
Preheat oven to 220°C/200°C fan-forced. Line 2 baking trays with baking paper. Place bread, in a single layer, on 1 tray. Spray with oil and sprinkle with sumac. Place falafel on remaining tray. Bake for 8 minutes or until falafel is heated through and bread is golden and crisp.

Meanwhile, reserve 1/2 cup parsley. Finely chop remainder. Combine yoghurt and half of the lemon juice in a small bowl. Place tomato, onion, chopped parsley, chopped mint, oil and remaining lemon juice in a medium bowl and toss to combine.
Step 3 of 3
Arrange lettuce and cucumber in a large dish. Top with tomato salad, falafel and dressing. Scatter over mint and reserved parsley. Serve with bread.
