- 3tablespoons olive oil
- 2tablespoons balsamic vinegar
- 1teaspoons maple syrup
- 2 balls burrata
- 50grams pistachio nuts, salted, shelled, chopped
- 70grams rocket
- 1 pinch cracked black pepper

Description
Creamy burrata works perfectly with sweet and sticky grilled peaches in this delicious salad.
Method
Step 1 of 4
Cut the peaches in half, remove the stone, slice each half into quarters and lightly brush with olive oil.
Step 2 of 4
Heat a griddle pan over a medium high heat and place the peaches flesh side down for 2 minutes then flip and repeat on the other side.
Step 3 of 4
Whisk balsamic vinegar, olive oil and maple syrup together in a small bowl. Place the rocket and grilled peaches on a serving platter.
Step 4 of 4
Place the burrata on top and slice open, top with cracked black pepper, drizzle with dressing and scatter chopped pistachios all over before serving.
