  • 1 bunch oregano, leaves picked
  • 1/3 cup Woolworths extra virgin olive oil
  • 1tablespoons sherry vinegar
  • 3teaspoons wholegrain mustard
  • 1 garlic clove, crushed
  • 250grams green beans, trimmed
  • 320grams mix-a-mato tomatoes, halved
  • 2 truss tomatoes, thickly sliced
  • 1 French shallot, finely chopped

Description

Learn how to whip up a punchy mustard vinaigrette for this tasty tomato and green bean salad. This simple side is the perfect co-star to any main dish.

Method

Step 1 of 3

Finely chop half of the oregano. Place oil, vinegar, mustard, garlic and chopped oregano in a jar and season with pepper. Seal with lid and shake to combine.

Step 2 of 3

Cook beans in a medium saucepan of boiling water for 3 minutes or until bright green and just tender. Drain and refresh in a bowl of iced water. Drain.

Step 3 of 3

Arrange beans and tomato on a platter. Drizzle over vinaigrette, and scatter over shallot and remaining oregano. Serve seasoned with pepper.
