  • 5milliliter olive oil spray
  • 1/3 cup extra virgin olive oil
  • 2tablespoons balsamic vinegar
  • 1 pinch freshly ground black pepper
  • 2teaspoons dijon mustard
  • 1 pinch sea-salt flakes
  • 120grams baby Spinach & rocket leaf salad
  • 1tablespoons fresh chives, snipped
  • 1/4 cup pistachios
  • 250grams haloumi, drained, sliced

Description

Plump and bursting with flavour, strawberries make an excellent addition to salads and pair wonderfully with haloumi and leafy greens in this tasty recipe.

Method

Step 1 of 3

Whisk oil, vinegar and mustard in a jug. Season with salt and ground black pepper. Set aside.

Step 2 of 3

Heat a chargrill over high heat. Spray halloumi with oil. Chargrill for 1-2 minutes each side or until golden. Transfer to a plate.

Step 3 of 3

Place spinach and rocket in a large bowl. Add the strawberries, pistachios, halloumi and chives. Toss until well combined. Add the dressing to salad just before serving. Toss and serve.
