- 150grams marinated feta
- 4 green onions, finely chopped
- 500grams kumato tomatoes
- 1/4 cup extra virgin olive oil
- 1teaspoons dried Greek oregano
- 1tablespoons red wine vinegar
- 1/4 cup pistachio kernels, toasted, chopped
- 50grams wild rocket
- 1tablespoons chives, chopped

Method
Step 1 of 6
Slice Kumatoes® into 1 cm thick slices and arrange over a serving board or platter. Season with salt & pepper.
Step 2 of 6
Combine oil, vinegar, oregano, chives and green onions together. Spoon over the Kumatoes®.
Step 3 of 6
Cover and set aside for 10 minutes.
Step 4 of 6
Just before serving, crumble over the feta, scatter over the pistachio nuts and rocket.
Step 5 of 6
Drizzle with a little extra virgin olive oil.
